Proteins (also known as polypeptides) are organic compounds made of amino acids arranged in a linear chain and folded into a globular form. The amino acids in a polymer are joined together by the peptide bonds between the carboxyl and amino groups of adjacent amino acid residues. The sequence of amino acids in a protein is defined by the sequence of a gene, which is encoded in the genetic code. In general, the genetic code specifies 20 standard amino acids; however, in certain organisms the genetic code can include selenocysteine—and in certain archaeapyrrolysine. Shortly after or even during synthesis, the residues in a protein are often chemically modified by post-translational modification, which alters the physical and chemical properties, folding, stability, activity, and ultimately, the function of the proteins.

How much protein should I be taking for body building?
Q. I've been body building for about 6 months now and I'm not sure how much protein I should be taking. Some people say about 30 grams a day and others say 1 gram / lb of weight. I'm 6'3", 220 lbs with about 18% body fat (and going down). The other thing is when I should be taking the protein? I do take the protein shortly after a workout session, but do I need to take more protein on the off days as well?

A. You should be getting 1.5 - 2 grams of protein per lb of bodyweight. Protein consumption should be all day long with about 2.5 hours in between meals. Pre and post workout meals should be the most important. Drink plenty of water in conjunction with eating frequently throughout the day.
